Spicy Shrimp

 

​​​​​​​I got quite a few nice emails and texts yesterday.  Thank you.   It meant a lot to know other people were feeling the same way…or at least have felt that way and understand.

​​​​​​​Wednesday is my re-charge day.  I think I’ve told you that before.  I always keep my schedule as open as possible on Wednesdays in order to catch up on life.

This morning I am going to go walk with Bonny and a few friends.  Then Bonny has a vet checkup.
Then I have some time to catch up on computer stuff….pretty low key.

Last night I made a super simple dinner for me and the boys and thought I would share it with you.  It took less than 10 min and we all gobbled it up.

I took a bag of frozen, peeled and deveined shrimp.
Sautéed in a pan using avocado oil, until almost pink.
Added a few handfuls of kale.
Added Juice of one lime and 2-3 cubes of garlic.
A little more avocado oil to cook down kale and finish cooking shrimp.

While Kale was cooking I threw a bag of organic jasmine rice in the microwave (they have these at TraderJoes).  Cooks for 3 min.

Add cooked rice to pan.

Done, serve with sriracha if you like it spicy.

So so simple… and a great example of my favorite way to cook healthy meals.
